Well I have been on vacation for over a week. Really enjoyed it and I have some great tips that I brought back with me. In addition it pains me to report that Richardson’s -the same owners of Dick’s Hideaway- has burnt down. I am hoping the damage on the building did not affect Dick’s. I have heard so many great things about Richardson’s but just haven’t had the opportunity to try. Now I’m going to have to wait for them to rebuild…..I hope they rebuild.

To All Restaurant Employees:

PLEASE do not throw away a customer’s left-overs until you are sure they aren’t coming back for them. I recently went dinning at a place that shall remain nameless because I’m not about bashing. I finished eating dinner, left and drove a block down the road when I realized I left all of my left-overs there. I turned around and went right back only to find out this establishment throws them away instantly after you leave. Really? In this economy?

Hello fellow cooks! The design of Cooking Basic has changed. I’m in the process of doing a redesign so bare with me. I’m not only writing to inform you of this but also because of a recent restaurant rumor I heard this past weekend. Palatte at the Cavness has closed their doors. Yes, the rumors are unfortunately true. It is with much dismay that I remove their link from my site. I can only hope that someone with as much passion for cooking as the previous owners continues the Palatte tradition. Good luck my friend, whoever you are.

Do you know what I love pho show? Pho, pronounced -fo. Pho is a traditional Vietnamese thinly sliced meat and rice-noodle soup dish. There are variations of this dish depending on your taste buds. I prefer the Pho with rare and well done beef. I always add a little hot sauce and plum sauce as I enjoy the dish. Pho is all the craze right now. For the locals a place I recommend is Khai Hoan Restaurant in Tempe, AZ.

Happy St. Patrick’s Day! Today I had the pleasure of eating two types of a traditional Irish Cuisine-Shepard’s pie and corned beef and cabbage. Let me just say, WOW! I had the Shepard’s pie at Casey Moore’s and the corned beef and cabbage at Four Peaks. Both were very delicious. I know everyone has their “favorite” at a restaurant however sometimes ordering a new dish can be very exciting and delicious……of course it could end up the other way-horrible, but if you don’t try you will never really know. Experience taste!

As a person who loves to cook I indulge in cooking literature from time to time. I was reading the February 2008 issue of Bon Appetit when I ran across the “From The Editor” article by Barbara Fairchild. Barbara’s comments on food was hit head on.

“Food is culture, food is big business, but most of all, food is the topic of conversation almost everywhere.”

She goes on to say, “What I believe it boils down to is this: We all want to eat healthfully and well, indulge occasionally with something extra-special, and use food as a relaxing, creative outlet that we can celebrate with family and friends. ”

Barbara I could not have said it better!
